Vegan Sushi Bowl
The actual easiest meal to make! Super quick and perfect for batching for meal prep for easy dinners or easy work lunches.
A long time ago, I used to make this meal so “healthy” I would actually have to stop myself from gagging lol. After learning the secret to how sushi places make their rice, I’ve been in love!
INGREDIENTS
Rice Ingredients
2 cups sushi rice
2 cups water
1/4 cup rice vinegar
4 tsp sugar
1 tsp salt
Tofu Ingredients
1 block of tofu, cubed
Oil
Bowl Ingredients
1 cup edamame
1 red capsicum, diced
1 carrot, shredded
1 cucumber, diced
1 avocado, sliced thinly
1 handful of spinach
1 sheet of nori
pickled ginger, for topping
sesame seeds, for sprinkling
soy sauce for drizzling
sriracha mayo for drizzling
INSTRUCTIONS
Start by preparing your block of tofu. Press and drain. Cube, and fry in a hot skillet with a drizzle of oil. Once one side is crisped and golden, flip to other side. Once cooked, set aside.
While your tofu is frying, start your sushi rice. Cook according to directions. When done let cool and then stir in the sugar, salt, and rice vinegar. This is the secret to a really good sushi bowl!
While both of those are cooking, prepare your veggies and toppings by chopping and dicing.
When everything is ready make your bowl by laying a bed of rice and layering your tofu and veggies. Drizzle and sprinkle all your other yummy toppings and enjoy!
