Banana Oat Waffles (easy and healthy!)

The easiest and most delicious waffles that are also somehow healthy?? Oat banana waffles - plant based, naturally sweetened, and gluten free!


I also use this same recipe for pancakes if you’re not into waffles.

2 cups rolled oats

2 cups milk

1 tbs flax or chia

1 banana

4 dates

1 tsp vanilla

1 tsp cinnamon

1/4 tsp salt

1/2 baking soda

1 tbs apple cider vinegar


INSTRUCTIONS

Blend together everything EXCEPT baking soda and apple cider vinegar.

Blend with high speed blender for 45 seconds to 1 minute until mix is really smooth and the rolled oats aren’t chunky at all.

Pour mix into a bowl and sprinkle the baking soda and apple cider vinegar on top. Gently fold in with spatula.

I like to use a 1/2 cup measuring cup to fill each side of my waffle iron. Cook until crispy and golden!
