Vegan Tomato Soup (super creamy!)
The creamiest and easiest vegan tomato soup out there! Super easy and quick to make!
Tomato Soup
INGREDIENTS
1 medium onion, diced
3 cloves garlic, minced
2 tsp oregano
1/4 cup basil, diced
1 tbsp tomato paste
2 cans diced tomatoes
1 can coconut milk
3 cups veggie broth
1 tsp balsamic vinegar
Salt and pepper to taste
INSTRUCTIONS
Sauté onion and garlic. Add oregano and basil and cook an additional two minutes until fragrant.
Add tomatoes, tomato paste, coconut milk, broth, salt and pepper, and vinegar. Immersion blend for extra smoothness and creaminess. Use a blender if no immersion blender is available.
Cook on medium low heat uncovered for about 20-30 minutes. The longer you can cook it the better the flavors.
Best served with a freshly toasted cheese toastie or a quesadilla!
