Spicy Peanut Noodles (quick and easy!)

I have been OBSESSED with these noodles lately! They come together so quickly and easily it almost feels like cheating somehow.

INGREDIENTS

Spicy Peanut Sauce

  • 1 tbsp oil, we use sunflower oil

  • 1 tbsp minced garlic

  • 1 tbsp sesame seeds

  • 1 tbsp gochugaru, or other chili flakes

  • 1-2 tbsp soy sauce depending on your taste

  • 1 tsp dark soy saucee

  • 1.5-2 tbsp peanut butter, plain or chunky

  • 1/2 to 1 tbsp rice vinegar

  • 1-2 tsp maple syrup or sugar

  • 2-3 tbsp water from cooked noodles

Noodles

  • 3.5 oz dry wheat noodles - I love these wavy knife cut noodles

Top with

  • Spring onions, coriander/cilantro

  • Veggies and tofu! We used bok choy and broccoli

  • Kimchi

INSTRUCTIONS

Sauce: Heat oil in skillet. Mix garlic, sesame seeds and chili flakes in a small bowl. When oil is hot, carefully pour over the mix in your  bowl- it will quickly fry and cool down. Add all other liquid ingredients, mix well and set aside.

Toppings: Prepare veggies and/or tofu. We simply pan fry the veggies and tofu.

Noodles: Cook noodles while veggies are cooking as instructed on package.

Serve out noodles into your individual bowls and add several spoonfuls of sauce on top. Top with the other toppings you prepared. Enjoy!
