15 Minute Creamy One-Pot Pasta

Are you looking for a super quick and easy dinner? This is it! Comes together really quickly and easily and is absolutely delicious!

INGREDIENTS

500 g of pasta, I used organic wheat spirals

1 small yellow onion

3 cloves of garlic

3 cups of veggie broth

1 can of coconut milk

1 can diced tomatoes

1 tbsp tomato paste

1 tsp of oregano

salt & pepper to taste

(opt) red pepper flakes

INSTRUCTIONS

Sauté onion and garlic.

Once sautéed, add in veggie broth, tomatoes, coconut milk, tomato paste, oregano, salt and pepper. Bring to a gentle simmer.

This is optional, but to make it really creamy and thick take an immersion blender and blend smooth. Alternatively you could dump into a blender and blend smooth if you’re feeling ambitious (I wouldn’t be 😂).

Add pasta and cook uncovered until al dente.

Serve with some fresh basil and chili flakes! Enjoy!
