No Bake Cookies

Healthy treat for kids (and adults!) These high-fibre, no bake protein bars are packed with nutrition and delicious!

Ingredients

6 tbs coconut oil

1 cup natural peanut butter

1 cup maple syrup

6 tbs cocoa powder

1 tsp vanilla

1/2 tsp salt

3 cups oats

Nuts and seeds to taste (we love pumpkin and chia seeds)

Instructions

In a pot add in the oil, peanut butter, maple syrup, cocoa powder, vanilla, and salt. Stir together on medium low heat until fudge and combined. Turn off heat and add oats and nuts/seeds and stir to combine.

Place a parchment paper in a 9x13 baking dish. Pour in mixture and press flat and firm with spoon.

Place in the freezer overnight or until frozen. Cut into squares and enjoy!

I keep mine in a bag in the freezer.
