Pudding Pie
If you’re looking for a high-protein, healthy treat that tastes incredible, you have found it!
Crust Ingredients
250g chocolate cookie crumbs
60g butter, melted
Pudding Ingredients
750g silken tofu
8 tbs natural peanut butter
8 tbs maple syrup
1 tsp vanilla
1/4 tsp salt
175g chocolate chips, melted
*note - this make enough pudding to fill your pudding pie, but also makes enough for a nice amount of pudding to place in a tupperware. If you want just enough for the pudding pie, half the recipe!
Instructions
Stir cookie crumbs and melted butter together in your pie dish. You can add more or less butter until it is moldable. Mold it on the walls and bottom of the pie dish. Put it in the fridge until the pudding is ready.
For the pudding, put everything into the blender, melting the chocolate chips before adding.
After blent smooth, pour into the base. Pour the rest into a Tupperware. Cover the pie and place in fridge overnight or until set.
