Veggie Dumplings

If you’re looking for an easy, quick, DELICIOUS dinner-night - do yourself a favor and go to the store and buy a bag of veggie dumplings 😂

If you enjoy making things from scratch and don’t mind spending a bit of time, then here’s how to make them from scratch—

DUMPLINGS
Ingredients

1 tablespoon Oil

2 teaspoons Garlic finely chopped

1 tabelspoon Ginger finely chopped

½ cup Red onion finely chopped

2 cups green Cabbage finely chopped

2 cups red Cabbage finely chopped

2 Carrots, shredded

Salt to taste

¼ teaspoon pepper

1 cup Spring onion

3 tbs Soy sauce

2 tbs rice vinegar

1 pack of dumpling wrappers

Instructions 

Making stuffing:

Heat the oil on medium-high heat and fry ginger, garlic for few seconds.

Then stir fry chopped vegetables, stirring continuously for 3-4 minutes.

Add the soy sauce and green onions. Now add salt and pepper, stir fry again for 2 minutes. Make sure not to overcook as the mix will cook again in the dumplings.

Turn off the stove.

Let the stuffing cool down.

Shaping and pan frying dumplings:

Put 2 tablespoons of stuffing in the center and shape the dumplings, or as much as will fit.

Using a wet finger, wet the rim of the dumpling wrapper. Fold in half and press together. Crimp if desired.

Once they’re shaped, put a generous amount of oil (1 tbs) in a hot skillet. Place dumplings bottom side down.

Once browned and golden, quickly pour 1/2 cup of water into skillet and cover immediately with a lid to trap the steam.

Once the water is gone, the dumplings should be done. Check if perfectly chewy. If they need a bit more time, adjust how much water you add.

Repeat until all dumplings are cooked.

Asian Edamame Salad

Ingredients

Salad

1 cup shelled edamame

1 cup diced cucumbers

1 red bell pepper, diced

2 green onions, sliced thin

1 large sheet nori seaweed, or snack pack size

2 tbs sesame seeds

Sauce

1 tablespoon rice wine vinegar

1 teaspoon sesame oil

1 tablespoon soy sauce

1 teaspoon maple syrup

1 teaspoon sriracha

Ingredients

In a large bowl combine all of the salad ingredients.

Pour the sauce ingredients over the salad and toss everything together. Serve immediately or cover and refrigerate until ready to serve.

Miso Soup Broth

1 cup water

1 cup veggie broth

1 tbs miso

handful of chopped green onion, for garnish

On medium-low heat, mix all together and cook until warm. Serve in bowl with your dumplings.
