Bagels

I adapted an English muffin recipe and made bagels! They worked well.

DOUGH INGREDIENTS

½ cup (100 g) active sourdough starter

1 tablespoon (20 g) honey (sugar or maple syrup)

1 cup (240 g) milk or plant milk

180 g whole meal (wheat) flour 180 g bread flour

1 teaspoon (5 g) fine sea salt

Everything bagel seasoning (optional)

Instructions

Warm milk in microwave. Once warm, add starter and maple syrup.

Add flour and salt.

Mix, let rest for 30 mins or an hour. Knead, (or knead before resting).

Put in Fridge over night.

Divide into 8 chunks. Roll into balls and press thumb to make a hole. Shape into bagel form.

Place on cut out parchment paper.

Boil water, add 1 tsp salt.

Throw dough in there and cook for 2-3 minutes on each side. Transfer to pan and sprinkle with everything bagel seasoning.

Bake at 220c for 25 mins.

Eat!
